"My DH and I both loved this, and he's not usually a huge soup fan. I used brown rice instead of corn, and green chiles instead of the peppers. I also cut the chili powder and cayenne pepper in half, so my DD would eat it too. Topped with low-fat sour cream, cheese, and fresh cilantro. Super healthy and delicious!"
