"Back in 1997 I went to an Indian Festival and tasted these wonderful versatile fried dough. Then when I was in Tucson, AZ recently, I went to San Xavier Mission as I heard that Indian vendors sold authentic frybread there. They sold two versions one savory and one sweet. "This recipe is very good. I used baby carrots and zucchini. Since I couldn't find almond flour, I pulverized almonds into a fine powder. I also cut the recipe in half as there are only 3 of us eating it, and I wasn't sure as to how well it would freeze. "I actually didn't know what to expect with this recipe as I am not a Vegan. I was pleasantly surprised. I whipped the potatoes with my hand held mixer and cut the recipe in half as we are only a family of two. Next time, I may try these with almond milk as I always have that on hand. "This is recipe is 5 Star Toddler rated! My Gandson loved it! I just used macaroni as I had it in my pantry. I didn't like the pesto that I used, but that is no fault of the recipe.
