    About Me

I moved to Alabama on purpose. I find every type of person represented here just as they are represented everywhere else and actually have not found there to be an over-abundance of rednecks. What I do find is a lazy Sunday morning feel to the pace of life here I haven't found anywhere else. And the food? Let me tell you, it's great to be adopted by a big southern family always ready to expose you to an old or new recipe.

I like Mexican food quite a bit. I'm famous for my MexiMeat. I like to take a nice beef roast or a few chicken breasts and dump them in the crock pot with some Rotelle and taco seasoning and let it go until the meat falls apart. Then I munch out on burritos or chimichangas or tostados or tacos for a few days. On the third day the remaining meat gets turned into the best chili ever. Of course, I'm single, for a family, you probably won't make it to the chili stage. For a great variation, try a pork roast with green chili verde sauce. MMMMM!
