"This recipe is fantastic! Simple, easy and good. I replaced the thighs with 3 boneless skinless breasts, cut into strips and the bell pepper with mushroom. I upped the garlic and substituted some of the paprika for hotter chile powder (about 2tsp of mixed Ancho, New Mexico and Chipotle. Because I used sliced breasts it only took a minute or two t..."

"I've made this recipe twice this week and love it! I use 2 cups zucchini (trying to get rid of whats in the fridge, 1 1/4 cup white flour and 1/2 cup rolled oats, coconut oil and heaping measures of spices. Oh, and I added golden raisins. Both times they needed more than the 20 minutes to cook in regular muffin tins. Next time I'll probably let ..."

"I made this recipe a couple years ago and loved it! I made it this afternoon with a few changes. I halved it (had only one eggplant : and used even less cumin. I remember it tasting overwhelmingly of cumin last time. I ended up using a scant teaspoon of cumin, a full teaspoon of New Mexico pepper and no cayenne or parsley. I would have enjoyed p..."

"I really enjoyed this! I made it with some chicken stock instead of all water and no soy sauce, though I did use seasalt and will use soy sauce next time. I probably used close to a teaspoon of rosemary, ground in a mortar and pestle, but it needed more, more, more! The peas and walnuts are a great addition. Yum!"

"We loved this! I kept the skin on my chicken and used New Mexico chile powder instead of cayenne. I also added three cloves of fresh garlic to the sauce and sauteed a cup of broccoli, 1/2 cup chopped red bell peppers and 1/4 cup green onions in the pan before adding the broth and lime juice. I only used 3 tbs lime juice and it still required extra..."
