    Reviewed Baked Parmesan Fish

"Nice recipe that we enjoyed and will make again soon. I subbed whole wheat flour. Next time I will try adding the panko next time as well. I also cooked on a cooling rack, but didn't get the crispy coating I was hoping for. I think I didn't let it cook long enough. I used tilapia. Thanks for sharing!"

Reviewed Homemade Vegetable Wash/Preserver That Works! (Spray or Soak)

"This worked pretty well. I used the soak. It did help my leafy produce and herbs last. I did not find that it helped remove the wax from the apples and cucumbers. But, I still felt more comfortable eating them. The leafy produce really got clean. I will use this again. Thanks for sharing."

Reviewed Low Fat Mexican Macaroni and Cheese

"We made as directed except I only added salsa and taco seasoning to half. I added the full amounts though, and it was a bit too spicy for me. I did use medium salsa and free handed taco seasoning spices, so that's probably on me. Also, we served as a main dish, so I got four servings. I made ours with whole wheat rotini and 5 oz of light Velveeta. ..."

    Reviewed Kale Chips

"These are good. They are different for sure, but they are definitely crunchy. I added garlic powder to mine after baking to boost the flavor. I think parmesan cheese would be a good after-baking topping too, in a small amount. Barbecue seasoning would be good also! They probably won't satisfy a potato chip craving, but they are good all by themselv..."

Reviewed Pace Three Bean Chili Chowder

"Easy to make and has lots of pantry staples. Very filling, and the bowl was really pretty! I added a slurry of flour and water to thicken it up a bit, but that was personal preference. I topped it with a fat-free yogurt and cilanto sauce and added low-fat cheddar to the top as well. Really hearty and tasty. It kept me nice and full until dinner as ..."

    About Me

I live in TN with a husband, 9 year old, 6 year old, and our two dogs. I'm a busy mom who loves to cook for family and friends. We have two boys, and they are the light of my life! My husband is a restaurant manager. We actually met while working together at Bob Evans in another city. He was one cute grill cook!! Now he is one cute manager, and I am so proud of him! He currently works for El Chico, and he is very happy there.
I am a stay at home mom who sometimes does temp work, which is a big change from corporate America. We'll see how that goes. Now that I have some more time, I plan to get back to the kind of cooking I used to do. You know...with pots and pans instead of a take out menu. I love to crochet, garden and hike with the family. Thanks in advance for any reviews you do of my recipes. :)

    Favorite Foods

I am trying to transition to a healthier lifestlye, so I am always on the lookout for family-friendly, healthy recipes. I love to bake, but try to limit my production. It's not so good for the waistline! I love Mexican food, Italian food....well, food in general.

My favorite restaurants usually serve Chinese food, because I can't make it at home. I love family owned restaurants, but I appreciate and support chain restaurants as well. Any restaurant that keeps people employed is a good one!
