"As others have states, a bit too sweet. When the hour was up, the cake tested done, perfectly. However upon cutting into it, near the center some of it was not done. So I would bake longer in the future and reduce sugar.....however leave the rum as is. This would work well with mango. Extra-ordinarily moist cake. Since the "glaze" ..."

"This is a very good upside down cake. The ginger gets lost, so may as well not use it. I like a simple mango/lemon sauce on top of it. "This is a great tomato pie! I like the way the panko mixture binds the juices of the tomatoes. The touch of sugar brings out the sweet of the tomatoes. The flavor is very nice. It would be great to add onions, green onions, oregano or other herbs."
