    Reviewed Chicken Chimi Chimies ( Chimichangas )

    "I used pre-cooked chicken from my freezer and these went together quickly. The kids (ages 5 and 8) both really liked them. The adults felt they lacked a little zing, but I knew that going in, so we just added some hot sauce to ours. Thanks for a quick and easy dinner!"

    Reviewed Brunch Casserole

    "This really hit the spot! It was a perfect recipe for my 5 year-old to help with- he enjoyed using the kitchen shears to cube the bread. The only change we made was that I was a little short on cheddar cheese, so we subbed part mozzarella. The kids enjoyed it as is, the adults added a little hot sauce to our servings.     "This was good but I had a few minor issues with it. My merange didn't ever get stiff (not a reflection of the recipe- I've never been able to do it yet) so we used whipped cream on top instead.     About Me

    I love to cook and experiment with foods- and I rarely follow a recipe exactly. (That cooking-by-feel method was learned from my mom, and it really confuses my husband sometimes!) I'm basically comfort food kind of cook-- we don't eat a lot of fancy stuff, and I don't like recipes with a million steps involved. My husband and I both love Mexican and other spicy foods. 

    I love to watch cooking shows- Rachael Ray, Jamie Oliver, Paula Deen, etc.   I will leave Food Network on in the background while I'm doing other things- I like to get ideas from the chefs!

    Favorite Foods

    My favorite foods are Mexican and other spicy foods. I love my crockpot and use it a couple of times every week.
