Shared Recipe Beet and Pomegranate Salad

Ever since I was young I've had a passion for cooking. The only problem was, I didn't have any one to show how to do it. So, I learned the best way I knew how, by experimenting. I like to take weird ingredients and see if I can come up with something new and exciting. I still haven't succedded in that but have come a long way in my years of trying. I still would consider me just an average cook, but my passion would stand up against anyone. Now, I'm married with 2 beautiful boys and live in Siberia, Russia where we work as humanitarian workers. Since I can't get a lot of "normal" ingredients here, I have learned to improvise. Now, if my family back in the States needs to know subsitutes for ingredients, they call me.
Any dish that presents a challenge would be my favorite dish. Right now I love to make bread since I just recently have perfected it. In a few months I'll find a new challenge.
Well, unfortunatly, the dishes I'm famous for are not my successes but my failures. The first one would be the first dish I came up with and served to my family when I was young: fried bologna and cottage cheese (with a pinapple on top for presentation). The other big one are my sand cookies. I mistook a bag of sand in the kitchen for brown sugar (believe me, they look just a like). You can figure out the rest.
My favorite restaurant would have to be a little cafe located in the basement of a building tucked away in Rome, Italy. It was my first meal I had there and, to this day, the best.
