"Made these this week-end and they were fantastic. I only used a cup of zucchini and a 20 oz. can of pineapple because that's what I had on hand. It didn't affect the outcome at all. I also made them into muffins instead of a loaf and sprinkled turbinado sugar on top before baking. It made 2 dozen muffins and I baked them at 350 for 20 minutes. ..."

"I make this every year for Thankgiving. It is my brothers all time favorite. I actually have to make two of them so that he can take one home with him. The only thing I do differently is to use the whole 8 ounces of cream cheese in the frosting. This is a winner! "
