    "I have to agree with Chef #242827 The ancho chilies make a better sauce. this is the way I learned over 30 years ago from a Mexican Lady that was my Grandmothers neighbor. Except we boiled them back to life then scraped the tender pulp from inside. The skin can be bitter so it is best to discard it. I am making around 18-20 dozen this weekend."
