"just took a trip back east visiting family....made these when we would sit down and play cards....you truly can't eat just one. "What a wonderful dish! Today is cinco de mayo and my family loved this. What a wonderful way to change up breakfast eggs. I layered warmed up corn tortillas, covered with retried beans, eggs, sauce and Topped with cheese. if I would have had sour cream, I think that would have been a nice touch in top. "Wonderful flavor. I have never used persimmons before. Very moist cake, I topped with a lemon glaze. I did not have any currents or raises, so I used Cranraisens..Yumm. Word of caution, a toothpick came out clean after 49 minutes so, I removed from the oven....The center was not done. So, not a pretty cake this time, but wonderful flavor."
