Reviewed Best Blueberry Muffins (Cook's Illustrated)

"I had high hopes for the recipe after reading the reviews - I was not disappointed! I am happy that another reviewer mentioned the thickness of the batter, as mine was closer to cookie dough consistency than runny batter (I, too, used fresh blueberries). I decided to make mine in a "Texas" muffin pan, and this recipe accommodated 6 large muffins ..."

"Just pulled this out of the oven, and it turned out great! I made it according to the directions, with the exceptions of using powdered cultured buttermilk (we always end up wasting the real thing), and adding jalapenos. I cooked it for the stated time and temperature, but it wasn't brown on top (oven's fault), so I left it in the oven for a coup..."

Reviewed Macadamia Nut Crusted Mahi Mahi

"I made this recipe as a non-traditional Thanksgiving dinner, and it turned out wonderfully. I served it with a lemon caper sauce, which definitely added some extra decadence and was a perfect compliment to the fish. My husband remarked that it was a meal that you'd find in an upscale restaurant here on the Gulf. Look forward to making it again "

    Reviewed Chicken Stew with Biscuits

"I've made this twice so far, and the first time a friend commented that it was one of the best meals he's had! I omitted the pearl onions as some others suggested, as well as the parsley because I didn't have any on hand. I've made it both with chicken breasts prepared according to the recipe and with a store-bought rotisserie chicken. I preferred the recipe version, but both were very good. Once, I made it with frozen prepared biscuits which was a time-saver and also delicious. Have added this to my "go to" collection when I need to feed a hungry family. Makes great leftovers!
