"Just made this recipe into muffins with fresh sweet potatoes (I boiled them whole for an hour, peeled them, and mashed them with my mixer. The muffins are DIVINE!!! "This cornbread deserves 10 stars! I've made this numerous times - and with just 2 people in the apartment, it's gone in a day or two...max!
