    Reviewed Southwest Vegetarian Bake - Weight Watchers Friendly

    "Yum! This is very good. Note that the recipe doesn't give an initial baking time...I left it in the oven until it was bubbly...about 30 minutes. Then I baked and finally broiled the last step to get the cheese nice and melted. I sauteed my onions and cilantro, used low-fat Mexican cheese, and drained the diced tomatoes.

    "Tasty and easy to modify. I didn't use the garbanzo liquid but did use a bit of olive oil along with some plain, non-fat Greek yogurt to add moisture. I also used a small can of black olives and a pinch of cayenne! So good!!

    About Me

    I am a native Californian, born in the Los Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area.

    I love kids and animals. I am an active school volunteer for my two teenage daughters as well as a Girl Scout leader. My husband and I have two Dalmatians, one very sweet bird, and one horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club.

    I stay active and have Jazzercized for over 30 years on a regular basis. But my new passion is cycling. I have formed a local women's cycling group and we have gone from not having ridden in years to completing a 50-mile ride all within the past year. It has helped me loose more than 50 pounds and keep my blood pressure in check!

    I have loved getting involved in the RecipeZaar community and play tag games and post photos.

    Have been a sports fan since childhood and definitely have enjoyed getting to know about hockey since we have a very successful NHL franchise in our area: Go Sharks!
