Reviewed Zucchini Cutlets
"This is a very good recipe. In the future, however, I will cut the breadcrumb amount to just 1 cup."

"Congratulations Jeff! On winning the show and on this winning recipe. Delicious, easy and left-overs rocked!! The homemade Giardiniera was such a compliment to the meat. Looking forward to more sandwich recipes.""

Reviewed Homemade Hot Giardiniera
"This tastes so much better than jarred Giardiniera. What I really like about making this at home, is being able to use the amount of salt that I see fit in the brining stage. I used 1/8th of a cup. The finished product has just the right amount of salty taste. I used 4 serrano peppers - perfect. Great addition to the pot roast sandwich. Love""

I am a semi-retired, mother of one daughter, grandmother to 1 granddaughter, very, very lucky gal. My husband and I moved to the Riviera Maya from Colorado in January 2003. We live in Paradise! We both sell real estate and enjoy selling people their own little piece of paradise. We love boating, fishing, golfing, competative snorkeling (!), traveling, cooking, EATING!
Living in a tourist town, you would think that good food options would be endless but, unfortunately, that is not always the case. I have been challenged to become an even better cook because eating out is not all that great here. I have also been challenged by the local produce and meats not available in the USA. My favorite local produce selection is Chaya. Looks very similar to spinach but tastes sweet. I love making Chaya and Fresh Squeezed Orange Juice Smoothies. Chaya is the ultimate complete food. The Mayans have been using Chaya for everything from medicine to nutrition for 1000's of years.
Sushi and Thai food are my ultimate favorites. Unfortunately, my town offers neither. When I go back to the states to visit, friends and family know the only foods I want are Sushi and Thai!
