"Absolutely delicious and very easy! I added some red and yellow peppers and a stalk of celery to the roasting pan, and increased the onion a bit. I've made it a couple of times, using whatever is in the crisper that should be used up. Smells divine while cooking, healthy, and very intensely flavored. It freezes really nicely too!"

"I can't believe that I forgot to rate this! This has been a regular in our dinner rotation since I first tried the recipe a couple of years ago. It is delicious, filling and very easy. I omit the cayenne, but otherwise follow the recipe, and it never fails to garner compliments! Freezes nicely too, but there is rarely any leftover! Just be sure ..."

"My family really enjoyed this! I've never considered putting pesto with marinara, but the polenta really absorbed the pesto and had wonderful flavor. Quick and easy, and used staples in my pantry. Great weeknight dinner!"

"This was quite good. I had initially planned to make it in the crock pot, but it came together very quickly on the stovetop. While it simmered, I made basmati rice and steamed veggies to go with it. "Very good, very economical and very filling! I made as written, then added about 1 cup of cooked chicken (leftover rotisserie chicken, and about 2/3 cup of uncooked pasta stars.
