Reviewed Mocha Buttercream Chocolate Espresso Cake
    Handle
     |  By Annacia

"I wanted to make a mint mocha cake so, I replaced the vanilla extract with peppermint (1 for 1 and this is the best cake I've ever made, it was amazing, and I'm not a big cake lover. The end result was really light and refreshing with subtle flavors, and I can't wait to make it again. In the cake mix I used 1/4c cocoa, 3 tbls oil and 1/4c sugar..."

"There's nothing not to like about this recipe. It's healthy, but it's something you actually want to eat. It's easy, but it's something you can serve to guests and feel good about. The texture was amazing, the rice was firm, the overall dish was creamy, but just enough so that it wasn't dry and the crunch of the nuts & seeds rounded things out ..."

"I reduced this recipe down to 1c (serves 3-4, used the juice of one 20oz can of pineapple (a little over 3/4c and added an extra 1/4c brown sugar for a sweet, though not overpowering, sauce. Also, as I was using this for a stir-fry, I added 1tbls cornstarch to thicken it up just a bit, though I would use up to 2tbls, depending on the applicatio..."

"This turned out rather well, though I did make a few changes. I pureed the soup (tomato base, pasta, vegetables and added dried parsley (1tbls and oregano (1tsp, I also added 1/2c of dried bread crumbs to bring it together (in addition to the fresh bread. Next time I think I will add an extra 1/4-1/2tsp of salt and either more bread crumbs o..."

    Handle

"I wasn't terribly impressed with this, it could have used more seasoning and the potatoes cooked down much more than I was expecting, leaving the soup a bit grainy. It also lacked the richness I would expect from a clam chowder."

"I would say this serves 4-6, good flavor and an easy throw together meal. I used non-instant rice, easily made while you dice/cook the chicken. I omitted the shredded cheese topping, opting for bread crumbs mixed with a small amount of margarine, also I used American cheese slices in place of the Velveeta, as its what I usually have on hand"

Reviewed Neighborhood Ham and Bean Soup
    Handle
     |  By Bobbie

"This was the first time I've had/made Ham & Bean soup, overall it was pretty good. I added a couple bay leaves and used 8c water and 5tbls bouillon and even starting with a rather salty ham, this came out fine. The only change I think I would make is to cut it down to 1.5c of beans. Total cooking time was 4.5 to 5 hours."

"I've made this twice now with skim milk and margarine, and at first it comes out thin, but after letting it sit overnight, the frosting firmed up relatively well, its also quite good with the cool whip. Frosted one round layer cake."

"This was so good, the only change I needed to make was to use half canola oil and half butter. I also added four medium carrots (cut into matchsticks and cooked them along with the garlic, every bite of carrot had a nice strong tangy flavor to it. I'd be interested to try adding water and cooking the pasta in the sauce, in order to infuse more of..."
