"A classic cookie that we just love. A note of caution about the ingredients. If you use self-rising flour you need to omit the cream of tarter, baking soda and salt. Only add if using all-purpose flour. I use a dark cookie pan versus the aluminum since we love cookies with a crisp outside and chewy inside. These came out perfect baking 8 minutes."

"This dough was wonderful to work with. Nice and soft. I did let the rolls rise for 2 hours and they came out HUGE! Yummy big, soft rolls. We even ate leftovers the night after. "This is actually the exact cookie from Cooks Illustrated. I saw it demonstrated on their show long ago. Nice cookie. They tested many ways to make the cookies chewy. Final results were to melt the butter."

"The dough remained too sticky to work with after more than 3 hours of resting on the counter. I ended up putting in the refrigerator over-nite. Next day I was able to roll the dough and cut out the cookies. We found the taste of ginger a little overpowering to our liking. I would reduce the amount by a teaspoon if I made these again."

"I've been trying lots of different recipes since purchasing a bread machine. I've been looking for a recipe that turns out a soft crust suitable for sandwiches. "Made these today and for the most part felt it was a good cookie. It was a bit salty so would reduce the amount of salt next time. The cookies do not keep their shape very well during baking. They spread very thin even not flattening them prior to baking. I like a cookie that stays 'chunky' a bit more."
