    Reviewed Chicken Tortilla Soup II

     |  (1 person found this helpful) |  By Eddie Shipman

"This is a wonderful tortilla soup recipe. This makes a very large quantity of soup. I started it in a four quart pot but after adding the 4 cans of chicken broth I decided to put it into an eight quart pot. I used the masa harina instead of tortillas with excellent results. I also tempered the milk before adding it to the pot for fear it might cur..."

"What a great way to use leftover roast beef. I usually just make sandwiches and then a pot pie but wanted something a little different tonight. Made it as the recipe said except I had to use canned mushrooms. I didn't think it was overly salty using the ingredients as stated. We are a family of 3 and not big eaters so this will be enough for anoth..."

"I've made this recipe twice now. Next time I'll give the baby spinach a little chop just so it doesn't hang off the spoon when you're eating. My husband even loves this soup and he doesn't like cooked spinach! This is very similar to E.L.'s EJ's Simple Italian Meatball Soup so if you don't care for the spinach or want a little more spice you might ..."

     |  By Satisfied Kris

"I made this as the recipe stated with the exception of using leftover baked salmon in place of canned. I had 9 ounces of salmon, used the proportions as the recipe called for holding back some of the mayo/sour cream mixture because it looked like it would be too much for the amount of salmon. I added 1/2 tsp dried dill weed as one reviewer suggest..."

"This is a good busy day recipe. I made it just as the recipe indicates but would add another clove or two of garlic and herbs, perhaps an Italian blend. Also, this recipe says it serves four but it makes at least eight servings so plan to serve the leftovers another day and/or freeze some of it."
