    "Deciding at 5pm to make empanadas for dinner was not the most well-thought-out choice, but I'm glad I did! So dinner wasn't until 8pm... Okay, my variations: not fresh tomatoes, but a 15-oz can of diced tomatoes. Misread the recipe & used 3 Tbsp (instead of 3 tsp of shortening.
