    Reviewed My "famous" Shredded Chicken

    "You can easily shred chicken if you have a stand mixer (such as Kitchen Aid) by throwing cooked chicken in mixer and using paddle attachment until shredded as small as you'd like. No need for broth but I'm sure that would make it even more tender and delicious."

    "Great recipe! Delicious, easy, and inexpensive! A young/new cook could easily do this. Great one to teach older kids how to cook too! I used 1 cup Newman's Own medium salsa instead of the 3/4cup picante (the salsa isn't as liquidy). We might make them spicier next time for personal preference. We have two young children, one is super picky (age 4)...."

    Reviewed Best Homemade Mac-N-Cheese Ever

    "We liked the garlic and mustard but overall it tasted like a kicked-up white sauce, not so much like a cheese sauce. It also made a huge amount of sauce for the amount of noodles. Next time I will reduce the amount of milk.

    That said my picky 3yr old loved this so we will be making it again!"

    About Me

    My husband and I have one child so far, a daughter who is a year old. We are about to make a big move from MN to MO. I'll be working full time and my husband will be a full time student going after his master's. 

    We live on a tight budget and I try to make meals that are inexpensive, healthy, and relatively easy without it tasting like it came out of a box! 

    I find cooking enjoyable and even relaxing but on a day to day bases I just need to get dinner on the table!

    Favorite Foods

    I love to cook Asian-inspired foods especially those using an Asian sauce on a simple meat and veggie dish. I would have to say that balsamic vinegar is one of my favorite ingredients to cook with! 

    I love cooking stove top but I'm also a pretty good baker. I try not to do much baking since they are typically dessert items. 

    I enjoy experimenting with new techniques and I enjoy decorating cakes although I am a novice!
