"This was soooo good and filling too! I used scallions and added some chopped celery and carrots for color/flavor. I only need to add a little flour to thicken at the end. Served with chopped scallions, crumbled turkey bacon and a tad of sharp cheddar..that way everybody could put however much they wanted on top!!! Definitely making again!!!"

"Even my husband loved it! I used a can of diced tomatoes and ground turkey instead of the beef. Also, real cheese instead of the soy. You can definitely play around with the seasoning to your own liking. We topped with ff sour cream and hubby rolled his in a tortilla. Love the quinoa- so healthy for you too! Thanks!"

"The recipe should say 2teaspoons of BAKING POWDER instead of Tablespoons!!! Mine turned out pretty good, I added a few semi-sweet chocolate chips also. "This was great! I made it for Easter Brunch and my young kids loved it too- No leftovers!!! I used light sour cream and turkey bacon- as well as adding sauteed onions to the mix! I also used a combination of mild and sharp cheddar cheeses!!! Excellent recipe!!!"
