    "I looked at several different enchilada recipes online before deciding to try this one. It was pretty easy to make, and they were very good(I forgot to buy the chipotle chiles and they were good without. Even my picky 3 year old son ate them.     "This was delicious, and very easy to make. I added some Italian Sausage, which was very good. It is quite spicy, though; we served a different sauce to our small children. I will most definately make this again."
