"Great idea for using mashed potatoes or eating a meatless meal. I used flour tortillas and did fry a bit the onions since my hubby is not so fond of raw onions. I was looking for a way to use some extra queso fresco and this turned out to be perfect.I will be trying these with corn tortillas too."
