Reviewed Sweet Corn & Tomato Salad With Fresh Cilantro
"This is a wonderful recipe! A perfect dish when a quick side is needed for a busy day at home, or to take to a church potluck or summer picnic. It is very flavorful, and will pair well with any meat whether steak or a grilled hot dog... I did not have any red onion, so I subbed green onion in its place. This recipe also adds such vibrant color to ..."

Reviewed Easy Egg Salad With Cream Cheese
"We have an abundance of fresh eggs from our chickens, so I decided to make this egg salad for lunch. At first I made as directed except I used fresh tomato in place of the sun dried because of personal preference. After trying a bite I added more dill. I still felt it was a little to bland, so I added roughly one tsp. of prepared mustard to the mix..."

Reviewed Chicken, Black Bean, and Tortilla Casserole
"Made this for lunch after church. I used a can of fire roasted Mexican blend tomatoes (with green chilies and onion), and a mixture of cheddar and pepper jack cheese. I actually liked the flavor of the filling better before I added the chicken, and will probably leave it out next time; adding an extra can of black beans in its place. I also added a..."

Reviewed Beef Burgers
"TFC, with the cost of beef going through the roof and 6 mouths to feed (5 tonight) I needed to find a way to stretch things a bit. I must admit I was a wee bit hesitant as to how these burgers were going to come out as I feared they might taste too much like meatloaf- something I have never acquired a taste for and thus deprive my family of. I norm..."

Reviewed Reuben Casserole
"Wednesdays are always hectic, so simple dishes are always plus for dinner. Since I love Reuben sandwiches, I thought I would give this a try. I am so glad I did. It was so simple to put together and tasted wonderful! Since no one in my family likes thousand island dressing, I made the sauce I normally top our Reubens with (mayo combined with German..."

Reviewed Red Hot Mayo and Tomato Sandwiches
"Sharon, this sandwich is so simple to make and loaded with flavor. Now that Christmas break is over and we are getting back into the swing of school, I was on the lookout for quick fix lunches that are still healthy. I thought for sure I would hear a complaint or two from at least one of my children about it being to spicy, or that they did not lik..."

I am blessed to be a stay at home mom to four fantastic, crazy children. I work from son up till son down...thank goodness I only have one boy!
My favorite cookbook is not one that I cook from very often, it actually sits on top of my pantry propped up in an old basket. The cookbook was given to my grandmother just prior to her marriage to my grandfather and it has the family prayer and some recipes that my great-grandmother penned in her own hand inside. It is called All About Home Baking.

I do not really have a favorite dish to cook as I enjoy making many different dishes (It's the clean-up I would rather not do). I tend to prefer many ethnic dishes over American "classics". And my children hate the fact that hot dogs and boxed mac n' cheese are known as nuclear waste. During the summer anything that fits on the grill is fair game as I try to do as much cooking outdoors as possible.
I enjoy different restaurants, but the one set aside for special occasions is Carrabbas Italian Grill. If you love Italian that's the place to go. Otherwise I will choose a Mexican restaurant if given a choice.
