    "Whenever we have company, I serve waffles for brunch. I used spelt flour in mine. I don't use dairy but made my own butter milk using coconut milk and lemon juice, it worked great.     "This is a really tasty recipe. I used Stinging Nettles in place of the spinach but followed the recipe pretty much exactly as written.
