"I made this recipe while I was a chef at a very nice restaurant (1 of the 2!) on Washington Island in Wisconsin. We served it as a roast chicken and also used the breast for sandwiches. The skin and dark meat was usually family meal that we just devoured. Great recipe, you won't be disappointed!!"

I'm a self (and mother) taught cook. I have worked in several restaurants ranging from a small line cafe at college to a gourmet organic resort on Washington Island. I have a 12 year old daughter. I am in love with food....and my partner! My dream is to open up a restaraunt that donates meals and a percentage of proceeds to homeless and hungry individuals and families.
