    "1 of the BEST CARROT CAKE I've tried...besides almost burning down my house toasting the coconut....lol...the cake was delcious! I added more sugar to the frosting and substituted the chopped pinneapples for crushed ones....LOVED IT! next time I will not even attempt to toast the coconut flakes! :"
