    26 years Catering experience in total. For the Past 6 years I've been working as Head Chef for Chapel Hill Retreat & Function Centre's in the Blue Mountains NSW. AU.

    I still have a love of preparing good food and have a broad pallet and eclectic tastes.

    My favourite Foodie Magazines at present are Feast by SBS or Bon Appetit out of the U.S.

    Favourite My Favourite Wine at the moment is Captain Starlight Shiraz Viognier, from De Beaurepaire winery Rylstone. As well as Boy Meets Girl Simeon out of S.A.I live in the picturesque Capertee Valley which means to get to the first Winery Cellar takes 45 min.

    I also do menu consulting & Staff training for the Royal Hotel Capertee.
