This was soooo good. I had some leftover pulled pork that I had made in the slow cooker with just onions and Mojo sauce, and followed the recipe exactly from there. I loved it with the pickled onions, and poured a little of the brine in there for some tanginess.
Also, I couldn't find "ancho" peppers in my store; ..."

"VERY TASTY! Eating it right now. This recipe takes a lot of prep time, but once everything is chopped up, it's fairly easy to put together. I used turkey sausage instead of pork, and added a bit more oil to make up for the lost fat. other than that followed the recipe to a tee."

"I really enjoyed this dish. I used a cornbread stuffing mix plus I brined the porkchops, so it was a little too salty. As the chops cook in a sauce I might skip the brining next time. And believe me, there WILL be a next time. YUM"
