I'm a novelist and cookbook author. My CHEF CHERI'S HASTY, TASTY MEALS offers high fiber, low carb, low fat, low sodium recipes featuring the microwave oven and pressure cooker. The emphasis is speedy healthy cooking with a minimum of convenience foods. I am NOT a dieter. Its follow-up, HASTY TASTY MEALS IN THE RV, takes a few liberties to adjust healthful cooking to the tiny RV-size kitchen.
My very favorite foods (besides semi-sweet chocolate, of course!) are fresh salmon fillets, broccoli, fresh fruit shakes, and grilled or boiled shrimp. I'm heavy-handed with garlic, cook with lots of onions, and prefer red bell pepper to green. My family loves my jambalaya, shrimp scampi, black bean and chicken burrito bake, and steamed salmon. We enjoy most cuisines. My pet peeve? Restaurants who think a lean hamburger patty and a scoop of cottage cheese is a diet plate. Favorite restaurant? Joseph's in Santa Rosa, NM.
