Reviewed Danish Meatloaf
"This meatloaf was good--however, for some reason the blue cheese flavor in it seemed a little...off. The topping is spectacular. I think I;ll use it for ALL meatloaves from hereon in! If I make this one again, I would use only a tablespoon of water, or eliminate it altogether, as the topping seemed to fade away somewhat after baking. Also, I w..."

Reviewed Texas Roadhouse Cajun Horseradish Dip
"I halved the ingredients--but the end result didn;t seem spicy enough, so I used the original amount of chili sauce, horseradish, and cayenne, with only 1/2 cup each of the mayo and sour cream. Next time I think I will use three parts mayonnaise to one part sour cream--I would;ve liked a denser texture. All in all, a good recipe. We used ..."

Reviewed Chinese Chicken Wings
"These babies rock! When you want a reprieve from Buffalo wings, go for these--they're incredibly savory, (and somewhat sweet), and just delicious! And sooooo simple to prepare. We've made them many times here, and will be enjoying them again tonight. They're marinating as we speak. I don't change a thing--why mess with perfection?"

Shared Recipe Roast Chicken Parmesan
"Whole chicken stuffed with Parmesan cheese, breadcrumbs and sun-dried tomatoes, seasoned with garlic and Italian herbs, then roasted to perfection. Served with spaghetti and fresh mozzarella tossed in a savory pasta sauce. From Woman's World magazine. A truly elegant way to do Chicken Parmesan!"

Reviewed Betty Crocker's Savory Meatloaf
"A true classic. This is one you'll crave when you don't want anything fancy--just a delicious and comforting meatloaf reminiscent of days gone by. I mix up a sauce with ketchup, brown sugar and just a hint of mustard to top it. Perfect with mashed potatoes and a side of peas or corn. (Mixed in with the potatoes, of course!) I'm really surprised thi..."

Reviewed Ranch Style Maca-Meatloaf #RSC
"What a great meatloaf! The only changes I made were I used all beef (couldn't find ground pork) and added an extra minced garlic clove. It was full of flavor and moist. Even if you don't like Ranch dressing, do try this--you don't taste it specifically--all the ingredients just blend together beautifully to produce one tasty entree. While this woul..."

Reviewed Crock Pot Chicken and Stuffing
"We liked this! I used 3 bone-in chicken breasts, and added a can of chicken broth to the stuffing. (Pepperidge Farm) I also stirred the sour cream/soup mixture into the stuffing after about an hour or so. Nothing came out dry--as a matter of fact, there was a nice juicy surprise to be found at the bottom of the crock pot. Lots of savory broth, whic..."

The story is told that I was conceived on Christmas Eve night, which explains why my birthday falls in mid-September. And according to my mom, it's also the reason I was named Carol.
I love recipes with a new twist on an old favorite...or something fun, creative, and original where you find yourself asking "Now why didn't I think of that?"
I own two adorable cats who are a handful at times, but we couldn't live without them. The elder is a gorgeous bengal who is usually well-behaved, yet temperamental at times. Don't holler at her--she'll make it known you've upset her by lunging in your direction! At other times however, she's awfully sweet!
The "baby" is overly sappy to where you literally can't pry her off, and all she wants to do is nibble away at your ears. But what a cuddly cutie-pie she is!
I write in my spare time, and have recently completed my first suspense novel. I've found the writing aspect to be extremely entertaining and addicting; the editing and finding an agent who will read my manuscript somewhat frustrating. The advantage though, is the more I analyze the material and research the industry, the more I learn.
I also collect recipes, watermelon items, and "I Love Lucy" memorabilia. I enjoy cooking and taking photos of the finished dishes, shopping at discount book stores and yard sales, reading (mainly novels and cookbooks), scrapbooking, and playing video games. Mysteries or adventures with a great storyline and characters are ones I gravitate to most.
This is my favorite site for finding new recipes. And yes, I'm addicted.
We get to discuss the foods I crave?
First off, I am a huge fan of sauces, dips, spreads, dressings, etc. They're the recipes I search for most. I can't tell you how many times my boyfriend has looked in the fridge and complained "It's all condiments in here!"
Other favorites at the top of my list are cheeseburgers, spaghetti & meatballs, barbecued ribs, nachos, and crab cakes. To elaborate, I'm especially fond of sloppy cheeseburgers with plenty of toppings and smothered with a "special sauce" reminiscent of the Big Mac or Big Boy. When I find a recipe for something similar yet different, I'm absolutely thrilled! I also love bolognese sauce, and if it's served over gnocchi, tortellini or fettucine, then all the better. If you love it too, try the recipe I have posted for "Tortellini Bolognese". It's delicious and an excellent choice to serve company. I recently had "Philly Cheesesteak Nachos" at happy hour, and immediately fell in love with them. They were basically multi-colored tortilla chips covered with grilled onions, peppers, and pieces of steak, then draped in a creamy Philly cheese sauce. I'm guessing it was made with provolone, since it was a beautiful shade of ivory. My next batch of homemade nachos will be an attempt to duplicate them. "Remoulade Sauce" is a must with my crab cakes. Chef Rita's is delectable, and reminds me so much of Bennigans'. For an awesome presentation, serve your crab cakes on a bed of mixed greens and drizzle with the remoulade. I've purchased a clear plastic bottle like the red and yellow ketchup ones (they came in a set of three), and use it to "decorate" my dishes or culinary creations.
When it comes to desserts, it's cheesecake or chocolate mousse that I drool over.
Mizz Nezz has these two flavors combined to perfection in her "Very Chocolate Cheesecake", my favorite dessert on this site. I also adore frosted sugar cookies. (One of the reasons I love Christmas so much!) I encourage you to try "Perfect Holiday Sugar Cookies" which I've posted. They're so tender and delicious, and very easy to make.
I also hope you'll try "Supper A La King" which no one has reviewed yet. Normally I'm not fond of recipes prepared with cream soups, but once in a while one tickles my taste buds. It's wonderful served over shredded zucchini--just be sure to drain it well or you'll end up with a soggy dish. It's healthy and economical, and you won't believe there's soup in your sauce!
Well, it's time for my daily stroll through today's brand new recipes, photos, and reviews. Like a comforting meal or a long soak in a hot tub with a cool book, I aim never to miss it.
