The cook on a "wild west" chuckwagon was often nicknamed Cookie! I imagine them whipping up something good from whatever they could source... my modern take on that is trying recipes from around the world. I particularly like Southeast Asian, Moroccan/Mediterranean, Indian and Mexican.
My other love is grilling... not just the traditional manly hunks of meat, but also vegetables, fish and just about everything else.
Some favorite dishes to cook:
Vietnamese Banh Mi sandwiches; Po Boy sandwiches, NC style pork BBQ, spaghetti, stir fries, gizzards and chicken livers, lasagna....
