Reviewed Mole Paste (Used for Making Mole Sauce)
"This paste is a wonderful base for an authentic mole sauce. It is rich with a complex mix of chilis yielding more umami than pure fire. Believe me, it is still darned hot!"

I am the Sales Manager of a chemical distribution company. I sing tenor in the choir at St. James Cathedral. With a close friend, I brew Northwest and Belgian style beers and enjoy visiting breweries when I travel. I have been to over 100 ceraft breweries around the country. I look forward to visiting Belgium and Czech Republic to enjoy their craft.
I am passionate about food, drink and music. If you come to dinner at my place, skip the deli tray from the supermarket. Do something simple but MAKE IT. My parents were my first cooking teachers and were wonderful cooks. My dad and I watched Julia Child from the time she was first on TV. Bobby Flay, Jose Andre, Julie Sahni and Rick Bayless are my current faves. My beloved Martha is my cooking and life companion. She is magic in a kitchen!
My favorite cuisines are Indian, Mexican, Spansh, German and French. I make killer sausages, corned beef and pastrami. The best sausages so far are the Merguez (Morroccan lamb sausage), Kielbasa and Bratwurst.
My rabbit and duck dishes are always appreciated. A family favorite is Chicken Biryani and the old family recipe for German Potato salad.
