About 99% of my recipes will not contain processed ingredients. You will never find me listing canned tomatoes, canned gravy, pre-diced garlic in a jar, nada! Why? My husband is from India, a country with one of the lowest Alzheimer's rates in the world, as well as only a handful of people diagnosed with MS. Here is some food for thought:
* According to CBC.ca, the rate of Multiple Sclerosis (MS) in the United States is 135 cases per 100,000 people. In India, the rate of MS is 3 cases per 100,000 people. Keep in mind that India has a population of over 1.2 billion people, compared to only 300 million people living in the United States.
* 1 in 8 older Americans in the United States has Alzheimer's disease and it is the sixth-leading cause of death in the U.S., according to Alzheimer's Association. However, in India, the rate of Alzheimer's disease is one of the lowest in the world! (World Health Organization)
* The cancer rates in India are also lower than those in Western civilizations, and, for those Indians who are vegetarians, they have a reduced risk of oral, breast, and oesophageal cancers, according to the Journal of Postgraduate Medicine.
In India, everything is made from scratch. Everything. I believe this is the secret to living a long, healthy life. I will not promote processed junk in my recipes. In fact, any "Indian" recipe that asks you to use canned tomato sauce, or canned anything for that matter, is far from authentic. I hope I can help encourage at least one person to eat a processed-free meal at least once a day! I have been mostly processed-free for awhile now, making everything from scratch, and I already feel so much better about my health!
