"I cannot believe I haven't reviewed this recipe yet! It is one of my standbys. Every month or two, I make up 3 serving bags of the dry ingredients. It makes for an easy and mostly brainless breakfast that the kids adore. I do use real sugar instead of Splenda, but other than that follow the recipe exactly. "Me and my kids love this recipe, too. You do have to be careful about your protein, though, and cut it really thinly. I used shrimp once, and only cut them in half, and it didn't work out nearly as well as using deli sliced ham. And you definitely need the Kewpie and Bull-Dog! YUM! Thanks for sharing, we make this all the time."

"These are absolutely delicious! My husband and I both loved these. Unfortunately, my kids both thought this was too spicy. I think the next time I make this for the family, I will leave out the chili powder - and spice up DH's and mine! : I did add a bit of cheese to the top, simply because my kids wouldn't understand enchiladas without chees..."

"As written, this overflowed the baking dish I put it in (a 9x13", my standard "baking dish", making it necessary for me to clean my oven. Dinner was ruined.
