    Reviewed Pumpkin Cranberry Breakfast Cookie

    "We made these today and they are so delicious. I tweaked the recipe a bit. I was out of pumpkin puree, so used applesauce. Added cinnamon, cloves and allspice. Also added about 1/4 cup chopped walnuts. My small ice cream scoop worked great for putting on cookie sheet. We baked them for 12 minutes and they were so nice and moist. I make muffi..."

    About Me

    Hi, I enjoy cooking and creating new recipes.  Lots of health issues make it necessary to cook mostly from scratch.Diabetic, but allergic to all artificial sweetners...so I began creating my own recipes.  I have found most recipes can be made without butter, oil or shortening...I use pumpkin puree, bananas, zuccini, rhubarb, applesauce, cottage cheese, sour cream, yogurt...and I am sure the list could go on & on.  I have created recipes that are healthier, lower in calories and good tasting.  Works for me.

    I am a retired nurse.  Enjoy the computer, quilting and cooking.  Due to disability, I create the recipes and hubby does the actual cooking.  He enjoys being the taste tester...lol.  We live in the Midwest, have 4 children, 15 grandkids and 6 great grandkids...keeps us busy.  

    Favorite Foods

    Muffins seem to be my favorite to create.  I enjoy making cheesecake.  Logan's Steak House is my favorite place to eat out at.
