Reviewed Chicken Tortilla Soup II
"This was very good. We can't get Rotel tomatoes in Canada so I improvised with stewed tomatoes, salsa and hot sauce. Will make again, thanks!"

I am lucky enough to travel a lot with my career.
I am the President of Canada's only licensed Wedding Coordination Institute and Association, The Wedding Planners Institute of Canada. If there is a certified Wedding Coordinator in Canada (or at a Sandals, Atlantis or Palace Resort), they've been trained by me (2500 people worldwide to date). I speak around North America and the Caribbean about the Wedding Industry and am often in the Media. I also produce The Wedding Professionals Conference, this year it was in the Turks & Caicos, next year it will be in The Bahamas.
I enjoy cooking and have to cook new things all the time, or else I get bored and just won't cook. I love to create new recipes and the problem is I usually don't write them down. My husband jokes that he hasn't had the same meal twice since we've been married.
I love most food. I'll take a main course over dessert anytime. Hors d'ouerves are a particular favorite of mine, because I like variety.
Being in Special Events I get gourmet meals cooked by fabulous chefs almost weekly. It has opened my eyes to a whole new world of food (some good, some bad). So I find I am making more home-cooking food now.
