"Living in Israel, it's difficult to get some ingredients... like canned mandarin oranges, orange gelatin, and orange sherbet. So, I used pineapple gelatin, fresh clementinas/tangerines plus a touch of fresh orange juice, and grapefruit sherbet for a citrus dessert. Yum! "I just used the quinoa straight (no rinsing, and substituted barley flour for the rice flour. I also added a bit of cinnamon. They are so delicate and flavourful! A really nice treat for our lower carb diet. I made the cookies small, about 1-1/2 inch diameter, which produced about 80 cookies!!"
