"I first discovered this recipe in "Taste of Home" cooking magazine a while back and it is one of those recipes that my husband asks me to make for him. Don't let all the ingredients scare you it is overall an easy recipe to make. I usually use less salt than called for. It makes a large pan and these are hearty enchiladas."

"This was really good. My husband made it for dinner last night. We did add 2 cups of broth and a whole can of the Guinness draught so that veggies were covered with liquid. Also added a little flour water mixture to thicken the sauce up a bit. It only took about an hour and a half but he cut the veggies into smaller pieces. Great stew!!!"

"This is a great recipe to bring to any party. I also used reduced fat cream cheese and light ranch dressing and it still tastes great. I've also made it with left over cooked and chopped chicken breasts and it taste great that way as well. I prefer it served with tortilla chips and celery sticks."
