Reviewed Simple Tomato and Avocado Salad

"This is such an easy to make, yet really flavorful salad. I used an 18 year old balsamic vinegar. The salad made a great side to Recipe #501321. I could see making it often to accompany a Mexican meal. Thanks for posting this keeper."

Reviewed Grilled Black Bean Burger Quesadillas

"This was a VERY easy weeknight meal and we enjoyed it. I used medium salsa, 2Tb of a grilled leftover red pepper, and I omitted the bed of salad. DH didn;t bother cutting the quesadillas ahead of time. He just spread the filling and grilled them whole, then sliced them with a knife into the appropriate sized wedges before serving. About Me

    Dr. Jenny and DH

I work full-time as a School Psychologist in Michigan. Besides the kids, one of the best aspects of the job is summer vacation, when I can concentrate on doing more of the things that I like to do---like look up recipes and play games on Food.com!!!

I married my wonderful and handsome husband, Sean, in August 2007. He is a wonderful gardener and tends to both our veggie and herb gardens. We really enjoy cooking with our own fresh ingredients. We most often cook together, so my reviews typically reflect our joint opinions. He's the better cook, so I pick up a lot of my techniques from him.

My other interests include reading (biographies and historical fiction), "appreciating" wine (I use the term very loosely as I love to drink it, but am not sophisticated with all the tasting terms), attending local food and wine events and farmer's markets, cross country skiing and snow shoeing (when there's snow) and listening to and going to see Irish bands (I love the Pogues and Flogging Molly).

I also enjoy travelling, and have seen a good part of Western Europe over the years. One of my favorite places is Italy, and Sean and I had a great time on our honeymoon eating, drinking, and sightseeing in the Cinque Terre and in Tuscany. In July 2009, we expanded our horizons to Eastern Europe and visited the Czech Republic, Slovenia, and Croatia.

Besides my husband, the other lights of my life are my cats: Pip (the orange one), Chloe (grey--by Pip), and Giselle (ragdoll who gets her own photo), all of whom I absolutely adore.

    Favorite Foods

I love seafood, ethnic foods (especially Italian, Spanish, Japanese, Indian), and basically anything with some heat (I'm quite fond of my hot pepper garden). I gave up eating red meat in May 2011 and since the New Year 2012 have become pescetarian.  I have been experimenting with vegan cooking.  I am not much into sweets or baked goods. I'm one of the only people I know that does not really care for cake or chocolate, going back as far as childhood (ask my mom, I used to eat birthday pie instead of cake)!
