    1 Prior to sauteing the onions I sauteed about a teaspoon of black mustard seeds in the vegetable oil--until they started crackling.

    "Clear and simple--this is ***THE*** dirty rice recipe. Reduced it by a 1/4th--and was pretty much winging it with regard to portions.     "Very tasty recipe that is so adaptable! Used jasmine rice, oyster sauce instead of fish sauce, and crushed red pepper instead of the chopped pepper.
