I have a love/hate relationship with cooking and food. I love spicy, flavorful foods with a lot of veggies and a bit of lean meat. I despise pork and rarely cook with beef. I hate the focus our culture puts on food, when it is just fuel for our bodies. I don't have much time to cook and live alone, so I cook once a week and package up individual portions to reheat each day--so I have to cook foods I can enjoy for an entire week. I can't afford to buy special ingredients that I will use for only one meal, and I grocery shop only once every two weeks, so I buy lots of frozen or canned goods. I grew up very poor, and my mom was an absolute genius at stretching limited resources to make healthy, tasty meals--a skill I am proud to inherit!
My favorite foods are spicy, one-dish meals--curries, stir-fries, or stews over rice or pasta. My specialty is baked loaf cakes, but unfortunately I currently do not have an oven :(
