Shared Recipe Swai Filets - Greek Basil, Garlic Parmesan

"Swai is a relatively new fish in the meat counters of my area of the country. While shopping at Sam’s, I saw the bags of frozen Swai fillets and they looked so good that I decided to buy them even though I did not know what the heck a Swai was. I think that what appealed the most to me was the price; $3.99 per pound, wow!

    So, I brought i..."

Shared Recipe Valencian Rice (Arroz a La Valenciana)

"Paella originated in the provinces of Spain. An international dish nowadays with as many variations as countries that have embraced it, the different versions of Paella became better known in Latin America as Arroz a la Valenciana (Valencian Rice) and adapted to the agriculture and foodstuff available in the particular country. Nicaragua is quite..."

Shared Recipe Sloooooow Cooked Pork Butt

"This is, by far, my grandson's most favorite food in the world! Although the recipe is very basic, I have adapted several recipes that I have tried over the years and have come up with this one as my final favorite."

Shared Recipe Stuffed Potatoes - Papas Rellenas, Colombia

"Our "Finca" (farm) in Colombia was about 5 hours from my home city of Medellín, although the roads are much better now and you can get there in about two to three hours.

For vacation, my parents and I (as well as many relatives and their families) would go to the farms and have wonderful family reunions. We would always take the “l..."

    About Me

Just a guy from Colombia who loves to cook, make my own beer, my own sausage and play with my grandchildren.

On this page, you will find some of my personal favorite recipes that I have created, adapted or simply commandeered from family and friends.

Some of these recipes are of traditional Colombian foods that are tried and true from my own kitchen and have been recreated form my memories or old recipe books and cards given to me by my mother and grandmothers.

Other recipes are of my favorite foods that I have adapted to my own tastes.  I apologize for the lack of pictures (for now) but I have to confess that I am technically-challenged.

    Favorite Foods

I love traditional foods of all types and will try anything at least once (a trait for which I have been sorry a few times).  I am not much into "rabbit food' or very spicy food, I am basically a meat-and-potatoes kind of guy.  So, if you are looking for "healthy" or "non-fattening" repasts, I may not be of much help, sorry.

Although my family constantly tells me that they love my cooking (I hope they are not just being kind to the old man), my most requested and by far the thing that I am most famous for, is my Colombian salsa.  I have to admit that I have kept this recipe secret (even from my own family) for years but the time may be near for me to share it with the world.  We'll see.......

My motto is:  "If you like a recipe, make it; if it's close, adapt it."  I adapt a lot
