Reviewed Vera's Green Tomato Relish

I'm a 49 year old accountant who escapes the concrete jungle on weekends to travel around Texas competing in chili cook offs and raising money for charity. My husband and I live in a small lake community about an hour outside of Dallas, and wouldn't trade the country life for anything. Living in the country, we are lucky enough to have room for a big vegetable garden, and I grow lots of assorted peppers. I LOVE spicy foods, and I'm always looking for new ways to use my peppers besides the chili cook offs. We're also looking to make improvements in our diet, so I try to stay on the lower fat, higher fiber sides of dishes. I jokingly say it's my cooking skills that landed me my husband, but honestly, what else could it be? lol. I married the greatest man in the world and I am so very grateful for him....and his appetite. :)
I love to cook, and I'm probably on Zaar every day. Being Texans, we like to kick up the heat (the hotter, the better!) and I grow hot peppers and make my own spice mixes every year. When I bake I usually take that to work for my coworkers so I don't have to see all those calories on my thighs later, lol. They're a grateful audience. :-)
