"This gets the highest ratings for "Bread and Circuses." It is colorful, tasty and easy --- a great "fresh vegetable" addition to your table. I served it to my Book Club along with Grilled Bourbon Salmon and they all loved it. I added salad and rolls --- and I was "set.""

"This melts in your mouth! I served this to my Book Club and they loved it! My only suggestion would be to "watch" the amount of marinade the recipe makes; I adjusted the recipe for 6 people and had a TON more marinade than I needed."
