    I'm a 13 year vegetarian, a high school history teacher, a runner, a wife, and mother to a boxer puppy.

    I love to exercise, read, hike, and visit museums.

    My best dishes include: baked pasta with greens, jerk seitan, twice-baked spaghetti squash, tofu enchilladas, red and white lasagna, and holiday dishes like stuffing, brussle sprouts, and root veggies.

    Favorite Foods

    Middle Eastern - falafel
    Italian - puttanesca (sans anchovies)
    Caribbean - jerk seitan & plantains
    Veggies - greens (arugula, spinach, kale, cabbage, rapini, brussle sprouts, and stir fry greens) and squash.
    Fruits - apples, cranberries, peaches, and pears.
    Desserts - fruit crisps, ice cream, and cookies.
