"My husband found this recipe yesterday, and I made it - did not have quite a pound of zucchini, and only two smaller tomatoes, so made it in a 9 x 9 pan which worked out great. Thanks, Caryn for sharing this - it's definitely a "Keeper" recipe at our house."

"We make these - cut them in circles with a small glass and then put an Andes Mint in the center, topping with another circle. If you do the edges with a fork, they look really nice and are a big hit on any Cookie Tray."

"I made these this morning and found it took almost 25 minutes to bake them, but they were very good. I did add some fresh thyme leaves (removed from the stems) as I had made another recipe similar that used the thyme. Next time I'll try using buttermilk. Thanks for sharing erinn."

"We have been making these Pancakes for years (can't even remember where I found the recipe), and they are easy, tasty, and low carb. Don't tell anyone they have cottage cheese in them, and they won't know!"
