"Had a bunch of sausage to use up due to a freezer failure, so thought I'd give this a try. We liked it, but it seemed a bit bland. I have quite a few leftovers, so will try punching up the flavor with more spices next time I heat it up. Paired nicely with cornbread muffins and I like that it features a variety of vegetables. "The fact that my family enjoyed these pancakes is great, but I was the one sold on them. I'm not a huge pancake lover, but these were excellent. I used melted butter in place of the oil and let the batter sit for a bit before cooking. Thanks for sharing this recipe - it's a keeper!"

"This went over like gangbusters with my two picky eaters. I followed the recipe pretty closely but used catsup in place of the tomato sauce and sugar. "Super quick and easy basic recipe. I had several very black bananas so reduced the sugar by half (using brown sugar and it was just sweet enough. I doubled the recipe and baked it in a bundt pan and my cooking time was only 50 minutes. This will definitely be a repeat in our house - thank you for offering this recipe!"

"Really enjoyed this dish. Very healthy and flavorful, and easy to throw together. I wasn't able to find eggplant (not a huge fan anyway, so I subbed cauliflower. Also, used canned plum tomatoes so ommitted the tomato paste. Served over toasted couscous and even my picky kids gave it a go. Thanks for a crockpot recipe I look forward to making..."
