"I don't like the skin on stuffed bell peppers so I Googled ways to blanch it off. I tried the ole blanch tomatoes technique but after even 3-4 minutes in boiling water and then an ice water dip, they wouldn't even budge. What is the trick to getting the skin off sweet bell peppers, please?"

A retired R.N. who has also taught photography, oil painting and English as a Second Language (ESL). I taught English in Iraq for 8 of the 10 years I lived there and speak fluent Arabic. I'm an avid crafter who knits, crochets, scrapbooks, paints, and sews among other things. However, my very favorite hobby is photography and photoshop enhancing. As a vegan, I LOVE Mediterranean food, especially Middle East. I cook nearly all my meals as Middle Eastern or Italian...what a huge variety!! I suppose my most requested recipe is for beriani. My kids are particularly fond of an apricot & rice dish called mish-mish. Frankly, I like them all. Being frustrated at trying to find Italian food w/o cheese, eggs or meat, I've bought a pasta machine and made ravioli. It was delicious but the stuffing was only vegan cheese and spinach. I would dearly love some other ideas. Ironically, I really am not fond of tofu but prefer veggie and vegan cheese
